Bridgid’s Abbey - 8 oz
Made by Mark Gillman from a traditional Belgian recipe, this raw milk Trappist, monastery style cheese is medium mild, smooth, creamy, and buttery with a round flavor and slight truffle aroma. Aged 2-3 months. Pairs nicely with Pinot Noir wine.
Hooligan - 8 oz
A washed-rind, raw milk cheese (washed in brine) made by cheesemaker Mark Gillman, with a distinct earthy smell, creamy texture and a long lingering finish. Aged 2-3 months. Rated one of the top farmstead cheeses in the country by Saveur Magazine. Gold Medal-Gallo Family Vineyards Annual Gold Medal Awards. Pair with Shiraz or Cotes du Rhone wines.
Dutch Farmstead - 8 oz
Creamy, supple and well balanced with a smooth finish. Hand crafted by Mark Gillman, this Gouda style raw milk beauty has a hint of ripeness and medium bite - aged 3-4 months. Named a “Slow Food” favorite in 2003. “One of the top fifty artisanal cheeses made in America.” Saveur Magazine (April 2005).Try it with Pinot Noir.
Vivace Bambino - 8 oz
Made by Mark Gillman, this smooth, supple textured, raw milk cheese has hints of Emmentaler and Swiss Jarlsberg. Made with vegetable marzyme rennet. Aged 2-4 months. Try it with a light bodied Pinot Noir or Merlot wine.
Womanchego - 8 oz
Inspired by the classic Spanish sheep's milk cheese, Manchego, this cheese is medium sharp, slightly sweet with hints of fruit and nut and a subtle cheddar influence. Made by cheesemaker Mark Gillman. Raw milk cheese aged 4-5 months. Wonderful paired with Pinot Noir wine.
