Made by Mark Gillman, this smooth, supple textured, raw milk cheese has hints of Emmentaler and Swiss Jarlsberg. Made with vegetable marzyme rennet. Aged 2-4 months. Try it with a light bodied Pinot Noir or Merlot wine.

Inspired by the classic Spanish sheep's milk cheese, Manchego, this cheese is medium sharp, slightly sweet with hints of fruit and nut and a subtle cheddar influence. Made by cheesemaker Mark Gillman. Raw milk cheese aged 4-5 months. Wonderful paired with Pinot Noir wine.
